Banana and date pudding cake

200g plain flour

1 tsp of bicarbonate of soda

9 dates (chopped)

2 mashed bananas

28g raisins

2 fl oz vegetable oil

1 tsp of vanilla extract

3 fl oz water

Mix the flour and bicarbonate of soda. Chop the dates and add to the flour with the raisins and mix well. Add the oil, water, mashed bananas and vanilla and beat well. Pour into a lined loaf tin and bake at 200C/400F for about 30-40 minutes or until a skewer comes out clean. This cake has no raising agents, so doesn’t rise. This is like a pudding rather than like a cake.
