Pina Colada Overnight Oats

Overnight Oats Recipe No 6

This was a experiment that worked well for taste, but not so pretty on presentation. Great as a breakfast or a dessert.




Layer One - the coconut layer

1/4 cup oats (gluten free if your gluten intolerent)
165ml coconut milk from a can (both the thick cream and the water)
1 tbsp ground flax seed

Place all in a bowl and stir until mixed.

Layer Two - the oats layer

1/4 cup oats
1/4 cup koko coconut milk beverage alternative to milk drink
Some pineapple pieces crushed up

Mix in a bowl.

Layer Three
Pineapple pieces

Layer the oats and coconut layers alternatively in a pretty glass putting pineapple pieces in between and leave in the fridge overnight. Serve with whatever extras you like. I sprinkled unsweetened desiccated coconut and pineapple pieces on mine. All I need now is a spoon that looks like a straw, a cocktail umbrella and a cherry!

This was a small breakfast or dessert portion.
