Baklava Style Overnight Oats

Well apparently its National Porridge Day! So what better way to celebrate than with another dessert inspired overnight oats.

The day before
The morning before soak the dates to make date syrup. You need at least 24 hours if not longer. I like to leave mine two days, but if you don't have time, you can soak in hot water for 20 mins and blitz in the blender.
Either the day before or as your making it.
Blitz the pichachio nuts to break them down into chopped nuts, if you don't have a blender or want to avoid washing it up, put in a food bag or tea towel and bash with a rolling pin.
The night before soak the oats.

Syrup
8 dates
5 tbsp water (or 7 if not using rose water)
2 tbsp rose water (optional)

To make the date syrup chop the dates in four and put the dates, water and rose water in a container and leave for at least 24 hours, longer if the dates are very hard. During the day before just keep stirring the dates to help them break down.

Oats

1/2 cup oats
2/3 cup non dairy milk 
1 tbsp ground flax seed (or chia is you prefer)

Mix the oats, milk and flax in a bowl. Leave in fridge overnight and they are then ready to be assembled in the morning.

Extra ingredient
3-4 tbsp pistachio nuts, chopped

Add some oats to the bottom of your serving dish. The add some syrup followed by chopped nuts. Then oats again, syrup again and pistachio nuts again. Serve and enjoy!
