Banana Split Overnight Oats

Overnight Oats Recipe No 16

Another pudding inspired overnight oats. This week its inspired by banana split ice cream dessert.

The night before soak the oats, everything else can be added the following morning.

1/2 cup oats
2/3 cup non dairy milk 
1 tbsp ground flax seed
1/2 tsp vanilla essence

Mix the oats, milk and flax in a bowl and leave overnight or for at least 2 hours

If you don't have any date syrup, soak about 10 dates in water to just cover the night before or soak in hot water for about 30 mins. In the morning whizz it up in your blender to make the syrup. This will make more than you need, but any less and your blender probably wouldn't be able to make it. Add about 2 tsps cocoa powder and whizz again to mix. If you do have date syrup, add a little cocoa to the amount you think you will need to make chocolate sauce.

Other ingredients
1 banana
4 or 5 raspberries or strawberries, mashed
Chopped nuts, I used walnuts, but any nuts is fine.

Peel the banana and split down the centre. Scoop out the oats with a 1/4 cup measure and pile on the oats on top of the banana in two mounds. Pour the chocolate date sauce over and the mashed fruit and sprinkle with nuts to decorate. Enjoy

There isn't exact measurements for the date syrup or nuts as its up to you how much you use.
