Neapolitan Style Overnight Oats

This week the dessert inspiration is Neapolitan Icecream! So we have a chocolate layer, a vanilla layer and a raspberry layer. Although traditionally in the UK its a strawberry layer, but I wanted to use raspberries. As its now a cold autumn day I also used all the fruit at room temperature, but in the summer it would be good to use frozen fruit to make it more like a soft serve ice cream.

The night before soak the oats. If you prefer you could soak them during the previous day and then do all the preparation the night before, so its ready to serve in the morning. I would still leave the banana to the following morning, but its up to you and you could also add a bit of lemon to stop the banana going brown. I haven't tried this though.

Oats

1/2 cup oats
2/3 cup non dairy milk 
1 tbsp ground flax seed (or chia seeds if you prefer)

Mix the oats, milk and flax in a bowl. Leave in fridge overnight and they are then ready to be assembled in the morning.

Extra ingredients
1/4 - 1/3 of raspberries, frozen or fresh.
2 tsp vanilla essence (or use vanilla seeds)
1/4 - 1/2 tbsp cocoa
1 large banana

Once the oats have soaked overnight or for a few hours, divide into three. Each third will equal 1/4 cup.

Add 1 tsp vanilla essence and just over a third of the banana to one portion mashing in the banana with a fork. If using frozen banana for a summer treat, you will have to use a food processor to break the banana down.

Add the cocoa (best to sieve using a small sift such as a tea strainer) to another portion with 1 tsp vanilla essence. Add 1/4 tbsp cocoa and then mash in just over a third of a banana, then taste and add more cocoa if you prefer.

Add the raspberries to the remaining portion of the oats. If using frozen raspberries you may want to leave to defrost first and then mash in with the leftover banana reserving a couple of slices for the top.

Layer up in a dish and decorate with a couple of slices of banana and enjoy!
