Overnight Oats Recipe No 10

Not a fancy one this week. I knew I would have little time to make it or eat it for that matter!!

Stage one, night before


Stage 2 - This is how it looks in the morning


and this is how it looks mixed up. I had also transferred it to a pyrex dish to take with me to work to have on my morning break.

1/2 cup oats
2/3 cup non dairy milk 
1 tbsp ground flax seed
mixed fruit, fresh or frozen

Mix the oats, milk and flax in a bowl. Then add fruit. I used frozen and had blackberries, cherries, strawberries, raspberries, redcurrants and blackcurrants and leave overnight in the fridge. As I used frozen the juices ran into the oats a little, which is good. I had also put a layer in between the oats as well as on top. Mix it up a little in the morning and enjoy!

I plan to do one (occasionally two) new overnight oats post every week, sometimes quite traditional and sometimes a pudding style one. Probably on Thursday or Friday mornings, so please follow my blog if you want to get new overnight oats breakfast ideas. My other overnight oats recipes.

Carrot Top Pesto

This is one of the things I made last week, but I don't have a exact recipe. I put some carrot tops in a food processor and added walnuts and oil and blended. It was very bitter. Carrot tops are bitter and of course I added a bitter nut. So I added some homegrown mint and some brazil nuts and some nutritional yeast and now it tastes good. I have had it with pasta and intend to try it in sandwiches too.

These are the gorgeous carrots I got from a local farm shop freshly picked for me. Don't they just look like real carrots and two of them are hugging each other.


Snickers Style Overnight Oats

Overnight Oats Recipe



This is what I used, but please do take this as an idea and play with it to suit your taste buds!

Make up the oats layer and leave in fridge overnight. All the other layers can be made either the night before or in the morning, so long as you have soaked the fruit for the caramel. Assembly as you wish. I used the chocolate crunch at the bottom, followed by the chocolate pudding, followed by the oats, then the caramel layer, crunch again, pudding again, then topped with crunch and chopped peanuts.

Chocolate crunch layer (used for bottom, middle and top)

1/4 cup (4 tbsp) creamed coconut softened (coconut butter)(I put the pack in a mug and add boiling water to melt the packet - if its sealed, just add water to cover a quarter of it, and then press out 1/4 cup, if its open, be careful not to get water in it. You can always make up the whole packet into chocolate crunch by taking the recipe x 4, but please note that it will solidify. You could make it into a chocolate bar and add additions such as fruit and or nuts or in a container where you could easily break it up into the crunch again.)
2 tbsp cocoa powder
1 tbsp liquid sweetener such as the sweet freedom fruit based sweetener

Whizz in a food processor until a crunchy consistency is achieved.

Chocolate pudding layer (easy to double and have some in for a quick pudding)

1/4 cup oats
1/2 cup non dairy milk
1/2 tbsp ground flax seed
1 tbsp cocoa powder
1 small banana

Whizz in a food processor until creamy.

Oats layer
1/2 cup oats
1/2 cup non dairy milk
1/2 tbsp ground flax seed

Mix in a bowl and leave overnight in the fridge

Caramel layer (This can be made a few days ahead if you wish)

1/4 cup raisins
1/4 cup dates
1 1/2 tbsp liquid sweetener such as sweet freedom fruit based sweetener
1 tbsp peanut butter (smooth or crunchy)
1 tsp vanilla

Soak the fruit overnight, then drain and whizz all the ingredients in a food processor to make into a creamy consistency.

Other
Chopped peanuts or mixed nuts to sprinkle on top.

Serve 2 for breakfast or 2 or 3 for dessert! (Picture shows 1 portion)

Banoffee Pie Overnight Oats

Overnight Oats Recipe No 8




SERVES 2

This has several layers and can all be made in the morning except the plain oats section if you wish.

Bottom biscuit layer

1/4 cup dates
1/4 cup pecans or walnuts

Whizz up in a food processor to a biscuit crumb consistency and layer at the bottom.


Caramel layer

1/4 cup dates
1/4 cup raisins

Soak for at least an hour or overnight if you want to make it the following morning. Drain and then whizz in a food processor until a smooth texture is reached.

Banana custard layer

1 banana
1/4 cup vanilla soya or rice milk (I guess you could you homemade almond milk with extra vanilla)
1/4 cup oats

Whizz up in a food processor. If done the night before it will go brown, but this doesn't matter. Its your choice

Oats layer

1/4 cup oats
1/4 cup dairy free milk or homemade nut milk
1/2 tbsp ground flax seed

Mix and leave to soak in fridge overnight

Cream layer

Put can of coconut milk in fridge the day before. Separate the solids from the liquid. The liquid can just be drunk or used in a smoothie or the oats layer if took out the day before. Use the solids for the cream layer.

Other
2 bananas sliced. For layering inbetween the other layers and on top
A sprinkle of mixed spice for the top.

The biscuity layer goes at the bottom and add the other layers as you wish, adding banana inbetween and on top. Sprinkle mixed spice on top and serve. Enjoy!

Black Forest Gateau Pudding Overnight Oats

Overnight Oats Recipe No 7

Is this a breakfast, pudding, smoothie or thickie, well its really a combination of all of them! This is the first time I have done this flavour combination.

 


Layer One - the chocolate layer

1/2 cup oats (use gluten free oats, if your gluten intolerent)
1 cup koko coconut beverage milk (could use milk made from almonds and water to make this less processed and more raw). You can also use any other milk alternative.
1/2 tbsp ground flax seed
2 tbsp cocoa powder (or raw cacao powder)
1 small banana

Place all in a blender and blend until smooth. Put in fridge overnight.



Layer Two - the cherry oats layer

1/2 cup oats (use gluten free oats, if your gluten intolerent)
1/2 cup koko coconut beverage milk (could use almond milk made from almonds and water)
1/2 tbsp ground flax seed
1/2 cup cherries, chopped (fresh or frozen)

Chop or process the cherries to break down into a paste. Then mix all in a bowl and leave in fridge overnight



Cream topping

I soaked cashew nuts overnight and then blended with a drop of water. This was a bit grainy and could be due to my food processer not being at its best.
OR
I used coconut cream on my second attempt. I put a can in the fridge overnight. Then I took the solids and you can just use as is, or whip it up to form peaks. Picture shows coconut milk solids


To decorate
Cherries (1/4c - 1/2c) and flaked almonds

Soak the cashews overnight so there ready to whip up in a food processor in the morning. Or put a can of coconut milk in the fridge, ready to use in the morning.
Layer the oats, cream and chocolate layers alternatively in a pretty glass incorporating some cherries in between the layers and leave in the fridge overnight.

Serve with cherries and flaked almonds.

Serve 2 for breakfast or 2 or 3 for dessert! (Picture one shows 1 portion and picture two shows two protions)

31 ways to use lemon peel

I like to use the whole of a unwaxed lemon. I freeze them and then grate the whole lemon and keep the grated lemon to add to dishes in the freezer. I also found this great list of what to do with lemon peel.

Pina Colada Overnight Oats

Overnight Oats Recipe No 6

This was a experiment that worked well for taste, but not so pretty on presentation. Great as a breakfast or a dessert.




Layer One - the coconut layer

1/4 cup oats (gluten free if your gluten intolerent)
165ml coconut milk from a can (both the thick cream and the water)
1 tbsp ground flax seed

Place all in a bowl and stir until mixed.

Layer Two - the oats layer

1/4 cup oats
1/4 cup koko coconut milk beverage alternative to milk drink
Some pineapple pieces crushed up

Mix in a bowl.

Layer Three
Pineapple pieces

Layer the oats and coconut layers alternatively in a pretty glass putting pineapple pieces in between and leave in the fridge overnight. Serve with whatever extras you like. I sprinkled unsweetened desiccated coconut and pineapple pieces on mine. All I need now is a spoon that looks like a straw, a cocktail umbrella and a cherry!

This was a small breakfast or dessert portion.

Citrus Bulgar Wheat with Chickpea Medley


1 small onion
1 spring onion (scallion)
2/3 can chickpeas (garbanzo)
2 tomatoes
1 tbsp lemon zest (I used frozen whole lemon - I buy unwaxed lemons and freeze them whole and grate them and store in the freezer)
6 large mint leaves torn up plus some smaller ones to decorate and serve
1 easy peeler orange (clementine)
1 tbsp raisins
1 tbsp salted cashews
1/4-1/3 cup bulgar wheat (or use couscous if preferred)

Pour boiling water over the bulgar wheat and leave covered for about 30 mins to absorb the water. Meanwhile slice the onion and spring onion and fry until brown. Quarter the tomatoes and add with the chickpeas and grated lemon and stir to mix and warm through. Then add the 6 large torn mint leaves and combine. Switch off heat and leave in pan while you finish preparing the bulgar wheat
Peel and divide into segments the clementines and then chopped in half and take out any seeds you spot. Put these in your serving bowl. Then add the raisins. Now add the bulgar wheat and mix with the raisins and clementine pieces, squishing the orange pieces to release the juice. Put to one side of bowl and add the chickpea medley to the other side. Sprinkle with cashews and small mint leaves to serve.

Tofu Brazilian Vegan Stew


3 tbsp lemon juice
2 garlic cloves, crushed
1 small head of cauliflower (mine weighed once prepared 220g)
200g tofu (frozen and defrosted gives a better texture, but not essential)
1/2 cup lightly salted peanuts
1.2 cup cashews
dash of black pepper
2 tbsp vegetable oil
1 small onion, chopped
3 spring onions (scallions) chopped
400g can of chopped tomatoes
1 small can (165ml) of coconut milk
500ml vegetable stock
1/4 tsp turmeric
1/4 tsp paprika
1/3 cup wholewheat couscous

Chop the cauliflower into florets and put in a small bowl. Add lemon juice, garlic and black pepper and stir to coat. Let marinate while you prepare the rest of the stew.
Tear frozen tofu into strips or chop fresh tofu into cubes.
Add 2 tbsp oil to frying pan, add cauliflower and garlic mixture and fry for 3 mins. Then add chopped onion and spring onion and fry for about 3-5 mins longer until nicely browned.
Add the tomatoes, juice and all. Then add the stock. (I first poured some of the stock into the can to rinse out any tomato residue, to get all the goodness!).Stir to combine. Then add the nuts, coconut milk, turmeric and paprika and bring the sauce to a simmer. Add the tofu and cauliflower and lower heat to a simmer. Simmer for 10 mins, then add couscous and simmer for 10 more minutes. Leave in pan for 5 mins to thicken and cool slightly and then serve. I served with a simple salad of salad leaves and cucumber.

This may seem very liquidy when simmering, but I prefer to do this than risk the stew sticking to the pan. The cous cous thickens it up in the end. You could of course you less stock and serve with rice.

Serves 2-4
Inspiration came from this dish. I just simplified the cooking and used tofu instead of faux chicken and different quantities and lemon juice and cous cous. Go dairy free is a great website.

I think this dish would also be good with chickpeas instead of the tofu. I liked this dish and even eat some cold the next day.
