Was going to try this yummy chickpea with roasted lemon and tomato dish today for my chickpea themed day. But accidentally split some tofu open when unpacking it so the dish changed, but was based on the idea of the roasted lemon and tomato anyway.
I roasted sweet potatoes, tofu, tomatoes and lemons, then mixed all together with some fresh mint from the garden. (can't believe I still have fresh mint in February!)
So I guess this can class as my sweet potato day instead!
